The first time I saw a Japanese soufflรฉ pancake on video, I thought it was fake. How can something that fluffy exist? Three failed attempts later, I cracked the code. The secret is in the meringue โ€” stiff peaks or bust.

Ingredients

โ—2 egg yolks
โ—3 tbsp milk
โ—1 tsp vanilla extract
โ—1/4 cup flour
โ—1/2 tsp baking powder
โ—3 egg whites
โ—2 tbsp sugar
โ—Pinch of cream of tartar

Method

Whisk yolks, milk, and vanilla together.

Sift in flour and baking powder, mix until smooth.

Beat egg whites until foamy, add cream of tartar, then gradually add sugar.

Beat until stiff, glossy peaks โ€” this is the critical step!

Fold 1/3 of the meringue into the yolk mixture to lighten it.

Gently fold in the remaining meringue โ€” be patient, don't deflate it.

Lightly grease a non-stick pan on the lowest heat.

Pile the batter high using a ring mold or freehand.

Add a tiny splash of water to the pan and cover โ€” steam is your friend.

Cook 6-7 minutes per side on the lowest heat possible.

Tips

The lowest heat setting is crucial. These pancakes cook from steam, not direct heat. If your pan is too hot, the outside burns before the inside sets.

Don't open the lid! The steam does all the work. Be patient.

Top with powdered sugar, fresh berries, and maple syrup. Watch them jiggle. Try not to smile. You will fail.
